Now that the sweet fall chill is in the air, it’s time for some cookie baking! I love this oatmeal cookie recipe because of my super sweet ingredient surprise; butterscotch. Now, I recognize that “Butterscotch” doesn’t exactly make most people begin salivating, but the right amount in the right recipe can be magical! It is the perfect surprise ingredient. If you are simply not a butterscotch person, then feel free to get creative with your add-in items and switch it up with chocolate chips, peanut butter chips, nuts, raisins, or even cinnamon chips. Since it is fall, I also sprinkled in a little splash of fall colors with edible confetti leaves. This cookie is an easy bake, full of fall love and will be enjoyed by everyone. My kids and husband approve!

I recently realized that my daughter is ALWAYS hungry for a snack when she gets home from school. I wanted to provide her with something yummy and on the healthy side, so that is how this recipe came to life. My Peanut Butter Banana Dippers are super tasty and they allow you to get creative & have some fun with your kiddos. For this recipe I like to bring out a roll of craft paper and lay it out across our kitchen island, and let me little chef get a little messy! If I have to be honest, a chocolate chip cookie made from scratch… has got to be one of my favorite snacks in the world! When I have the time, I truly enjoy baking them and I am always prepared for the opportunity by keeping the ingredients on hand and ready to go at moments notice. I wasn’t raised with a secret family recipe that was passed down from generation to generation, but I was raised on the classic chocolate chip cookie recipe that can be conveniently found on the back of a bag of chocolate chips… and to this day it is still my favorite! School is almost out and summer is right around the corner… which means it is BBQ season! I don’t know about you, but I am so excited. I love the social gatherings that summer brings and all of the yummy meals in store. I have a sweet tooth so I enjoy making and bringing desserts to all of our summer parties. My absolute favorite desserts to make are recipes that require minimal ingredients (without sacrificing taste!), don’t involve baking (the oven is way too hot this time of year!), and include fresh seasonal fruit. Don’t get me wrong, I adore chocolate, but with the heat of the summer I prefer a chilled fruity dessert. I have the perfect recipe that covers all of those bases, and will make you a very ‘welcomed guest’ at any summer shin-dig!

My recipe allows each guest the chance to indulge in their own personal fruity delight, because let’s be honest, who really wants to share something this delicious? And with the help of just a few simple ingredients and a very short prep time, you will have a stunning dessert that will make people wonder… how do you do it!? They look incredible and taste even better than they look! Win-Win!
In preparation for this recipe I ran out to my neighborhood Walmart for the ingredients. I always look in the Dairy section, for Reddi-wip® and the Oikos® Key Lime Greek Yogurt. The 6 count package of Keebler® Ready Crust® Mini Graham Cracker Pie Crust can be conveniently found in the baking aisle. And of course, you can’t make this delightful dessert without the touch of fresh herbs and fruit, found in the same location in the fresh produce section. I can be in and out of Walmart within 10 minutes when prepping for this dessert, because they conveniently locate these needed ingredients in 3 simple spots around the store. Thank you, Walmart, for making this shopping trip easy as pie!
-2 – 5.3oz containers of Oikos® Key Lime Greek Yogurt
-1 – package of Keebler® Ready Crust® Mini Graham Cracker Pie Crust (6-count)
-1 – 60z package of Blackberries – approximately 12 are needed
-2 limes – 1 for the recipe and 1 for the garnish
-1 – small package of mint leaves – for the garnish
Directions:
Open the package of Keebler® Ready Crust® Mini Graham Cracker Pie Crust (6-count), and set to the side.Cut 6 blackberries into small pieces, and place the small pieces equally in the bottom of each of the Keebler® Ready Crust® Mini Graham Cracker Pie Crust. Set the fruit-bottomed pie crusts to the side, while you make the filling.Spoon the 2 – 5.3oz containers of Oikos® Key Lime Greek Yogurt into a small mixing bowl. Add to the yogurt, 1 cup, or half of the 13oz can of Original Reddi-wip® (Save the rest for garnish.) Also, add fresh lime juice by cutting one lime in half and squeezing the fresh lime juice into the yogurt mixture.Mix the Oikos® Key Lime Greek Yogurt, fresh lime juice and Reddi-wip® together until the mixture is creamy and smooth. Equally spoon the filling mixture into each of the fruit-bottomed pie crusts. Each pie crust should be topped off evenly, to the top of the crust. Freeze the mini pies in the freezer for approximately 3.5 hours, or until firm. Once they are firm, remove from the freezer 15 minutes before serving; to slightly soften at room temperature.Top-off and decorate the mini pies within that 15 minute softening time. Garnish with the extra Reddi-wip®, mint leaves, extra blackberry slices and the second lime cut into wedges.
The beauty of this recipe is that with every bite you have a delicious taste of key lime and blackberries; the perfect combination of sweet and tangy. Not to mention the chilly and crisp temperature of the filling and the crunchy texture of the graham cracker crust… you will never want it to end.
If you are like me and always looking for a simple recipe to involve the kiddos in the cooking process, this is the recipe is perfect. These pies are so easy to make that you can let your little ones lend a hand. My daughter’s favorite part is watching them freeze in the freezer, every hour she opens the freezer to check on the firming process. And now she loves the taste of Greek yogurt and prefers it over any other type. Yay to healthy and delicious tasting snacks! Also, with only a few ingredients needed, the clean up is even quicker than the prep-time… Now that is what every parent needs!
