With Super Bowl right around the corner, I thought it would be fun to share 5 different game-day snack recipes that are crowd favorites.  I know how hard it can be to think of new and tasty appetizers to bring to gatherings, so I wanted to help you out! Today is the last and final recipe in my series – 5 Days of Super Bowl Snack Recipes.  I saved one of the best for last, my favorite dip recipe: Raspberry Chipotle Black Bean Dip.  This recipe will be a TOUCHDOWN with your guests!


Day 5:

Raspberry Chipotle Black Bean Dip

 Y’all… this is absolutely, positively my favorite bean dip recipe!  When my husband and I lived in Manhattan, Kansas (also known as The Little Apple) we tried a chipotle raspberry & black bean dip at our favorite local hotspot and immediately fell in love with it!  It is the perfect combination of sweet and spicy. This recipe is how I recreated that dip; my way of bringing The Little Apple home with us!)

Ingredients:Raspberry Chipotle Bean Dip Recipe

-1 – 8×8 glass dish (ungreased)

-8 oz. cube of cream cheese (softened)

-15.5 oz. can of black beans (drained)

-13 oz. of Raspberry Chipotle sauce (Every store offers a different brand in the dressing and condiment section, I haven’t tried a brand I didn’t like.)

-1.5 cups of Colby & Monterey Jack Cheese

-1 Bag of tortilla chips

Directions:

1. Preheat the oven to 350 degrees.

2. Spread the softened cream cheese evenly on the bottom of the uncreased 8×8 glass dish.

3. Pour an even layer of drained black beans on top of the cream cheese.

4. Pour and evenly disperse the raspberry chipotle sauce over the cream cheese and black beans.

5. Top it off with an even layer of cheese.

6. Bake in the oven for 30 minutes, or until the cheese is melted and golden brown.

7. Serve right out of the oven (either mixed or layered) with tortilla chips. Perfection!
