Day 2:
Buffalo & Bleu Chicken Dip
Ingredients:
-10 oz of frozen Buffalo Chicken Bites (I use the Tyson Fully Cooked Buffalo Chicken Bites, or any other brand of fully cooked buffalo style frozen chicken.)
-8 oz. of cream cheese – softened (I usually buy the cream cheese cubes.)
-1.5 cups of Colby & Monterey Jack Cheese
-3/4 cup of Buffalo Sauce (My favorite is Frank’s Red Hot Buffalo Sauce.)
-3/4 cup of Chunky Bleu Cheese Dressing (My favorite is Litehouse brand – found in the cold salad section in the grocery store.)
-1 Bag of your favorite tortilla chips (and/or) Take & Bake Bread Baguette-sliced and oven toasted per the package directions
-8×8 square glass dish
Directions:
1. Preheat the oven to 350 degrees.
2. Spread the softened cream cheese into your uncreased 8×8 glass dish.
3. Microwave the 10 oz. of frozen buffalo chicken bites for 2 minutes, just to warm.
4. Slice up the warmed chicken bites and layer the slices evenly on top of the cream cheese.
5. Continue layering with the buffalo sauce, followed by the bleu cheese dressing and finished off with an even layer of cheese.
6. Bake, uncovered for 25 minutes or until the cheese is melted.
7. Serve right out of the oven with tortilla chips (and/or) the toasted baguette slices. ENJOY!
