I don’t know about you, but all I can think about this time of year is “pumpkin-everything”! That is why I am excited to share my favorite Pumpkin Chocolate Chip Mini-Loaf recipe with you. It is delicious, easy to make and never disappoints!
This exact recipe can be made into loaf or cookie form, by just switching up the pans & cooking time. ENJOY!
PuMMMpkin Chocolate Chip Mini-Loafs
Ingredients:
-Mini-loaf pan (Wilton 4 – Cavity Mini Loaf Pan)
-1 (140z) can of pumpkin puree
-2 eggs
-1/2 cup of applesauce
-1/2 tsp of vanilla
-1 (18.250z) spice cake mix
-1 tsp cinnamon
-1/2 tsp of ground nutmeg
-1/4 tsp of ground cloves
-1 (12oz) package of chocolate chips
Directions:
-Preheat oven to 350 degrees
-Generously grease the loaf pan
-Beat pumpkin, eggs, applesauce & vanilla together (all wet ingredients)
-Stir in cake mix, cinnamon, nutmeg & cloves (all dry ingredients)
-Add in the whole package of chocolate chips
-Pour equal portions of the batter into each of the 4 mini-loaf sections
-Bake 30-35 minutes (Or until no longer gooey inside & until golden brown on top)
*bake 9-12 minutes for cookies on a lightly greased cookie sheet
Since fall is my favorite time of the year and I absolutely love everything PUMPKIN, this is the perfect recipe to make. I like to use the mini loaf pan because it makes the perfect sized loaf portions to then wrap up and pass onto friends & family.
With the help of plastic wrap, cute ribbon & adorable labels this yummy loaf has now become a delicious gift!
